I would usually pair Beef Tartar with a High Minerality water but this Austrian version has an raw egg yolk mixed in and that makes the dish very creamy soft. The raw egg somehow mellows the beef taste and integrates the in additional onions and capers into a mellow delight contrasting with the crispy - the open fire toasted - dark bread. When I was eating this dish I thought how perfect Tesalia still from Ecuador would work with this dish.Awards
