The eternal snowcap of the Cotopaxi Volcano provides the source of Tesalia artesian water. After a hidden journey through the unique geological strata the water emerges at the source in Paroquia Machachian as an impressive eternal artesian spring.

The water absorbs mineral and trace elements during the journey that gives the water its unique characteristic and taste. Tesalia is bottled at the source at a state-of-the-art bottling facility that does not alter the composition of the water and preserves its originality.

Tesalia was recognized with a Gold Medal in the 2018 TASTE AWARDS by an international jury and is the leading brand of natural bottled water in Ecuador.

#FineWatersPairings

I would usually pair Beef Tartar with a High Minerality water but this Austrian version has an raw egg yolk mixed in and that makes the dish very creamy soft. The raw egg somehow mellows the beef taste and integrates the in additional onions and capers into a mellow delight contrasting with the crispy - the open fire toasted - dark bread. When I was eating this dish I thought how perfect Tesalia still from Ecuador would work with this dish.
