Founded in 1904, the source is located in the village of Vilajuïga in the Alt Empordà region of Catalonia where the Pyrennes mountains crash into the Mediterranean Sea. Aigua de Vilajuïga is a naturally sparkling mineral waters with very delicate “aguja” (needle point bubbles). The natural carbonation is finer and more numerous than a water with added carbon dioxide, making it more delicate to the palate and giving a characteristic taste.
The Aigua de Vilajuïga catchment area is the Cap Creus Natural Park: Catalonia's first maritime-terrestrial natural park which covers an area of 13,873 hectares. This is an exception natural area with a geographical make-up of structures and outcrops that are unique in the world. The area is also a scientific and teaching resource, especially in the field of tectonics.
Vilajuïga is rare and it only bottles 264,000 gallons (1 million l) per year. The water was selected by Ferran Adrià to compliment his creations in the world famous El Bulli. Ferran selected Vilajuïga for the soft and effervescent natural carbonation which adds an additional layer of texture with food and it was a perfect match for many of his creations.
