"More than 1600 sources have been officially recognized in the French territory since 1823 [date of royal decree on natural mineral waters]. Currently, according to the inventory published in the Annals of mines in 1998, there are about 700 of which only 400 are used industrially in the spa or in the bottling plants. This reduction in the number of sources used is not at all a sign of impoverishment of the heritage hydromineral French. It is rather the consequence of renewal that is to abandon the old surface catchments are very vulnerable to replace them with holes drilled with modern techniques to provide better health guarantee and facilitate the sound management of the resource "(*).
